i started cooking at the age of 8 for me and my younger brother and i loved messing up the kitchen to create something special for the two of us.  After many disastrous attempts the vote led me into the kitchen during a student job, I was 15 and I loved being in that environment.  It was a family-run fish restaurant on the Roman coast and the grandmother of the family was always teaching me new things.  Everything was handmade and clean and there was great respect for the customer. When I was too tired and needed fresh air, I liked going out to peek at the people eating what I had made and this seemed like a miracle to me.  I had in my hands the highest and most noble form of love.  I am now 26 years old and have been living abroad for 4 years.  Here in Belgium I found myself in very elegant restaurants where I found myself using prefabricated products to help me with a quick preparation.  I've worked in places that said they offered healthy food or slow food but instead most of their products come from big industry and without respect for small companies.  What I would like is to rediscover the joy of feeding people with love and sincerity, avoiding the use of hydrogenated fats and processed dough.  Opening a small bistro where I can be happy to give my best and in which I can see my little dream come true and make my family and the people around me happy.  As a concept, I would like to import particular products from small companies and create a small bistro bar (especially takeaway and at home) where in a corner I can serve my line of 5 flavors of ice cream made exclusively with organic cow and buffalo milk.  It must be a place with a small internal laboratory for the doughs (using unrefined flours) and the kitchen and a room for pastry and ice cream.  I would like to explain to people what I mean by healthy eating and make them eat exactly as I would make my brother or future children eat.  I have no problems and my life is beautiful and I don't want to complain about anything and I don't care about living in luxury, but I feel that inside I have a lot to give and if you will agree to help me maybe I could really make many people happy.
